Vegan Buffalo Cauliflower Wings Recipe



Cauliflower Wings

• 1 large head of cauliflower
• 3/4 bottle of Wing-Time Buffalo Sauce
• 1 cup + 2 Tbsp non-sweetened, plain almond milk
• 3/4 cup chickpea flour
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp curry powder
• 2 Tbsp nutritional yeast

Directions

Preheat the oven to 450°F.
Lightly spray a large non-stick baking sheet with oil.
Separate/chop the cauliflower into florets.
Combine the flour, spices and nutritional yeast in a bowl and stir until well combined.
Coat a handful of cauliflower pieces in soy milk and then with the flour mixture. Place on the baking sheet and bake for 20 minutes or until crispy.
While the cauliflower is in the oven, heat the Wing-Time sauce in a medium sauce pan over low heat. Whisk in 2 Tbsp of almond milk.
When the cauliflower is looking crispy, turn it with a wooden spoon and heat the oven to broil. Allow the cauliflower to broil with the oven open for 5-7 minutes or until beginning to brown. Pull it out of the oven and place it in a large bowl. Pour the hot sauce mixture over it and toss to coat.

Skinny Bang Bang Shrimp Recipe


INGREDIENTS
• 1 lb shrimp (about 50 shrimp), cooked or uncooked. shelled or deveined.
• 10 skewer sticks (optional)
• 3 T chobani plain greek yogurt
• 3 T chopped green onion, plus more for garnish
• 1½ T sweet chili sauce (I used Franks brand)
• ½-3/4 T sriracha sauce




INSTRUCTIONS
1. (If you're grilling on a grill, be sure to soak wooded skewers a couple minutes in water to avoid burning)
2. combine yogurt, onion, sweet chili sauce, and sriracha in a bowl and stir well. set aside. (if you want to make the sauce a bit thicker, do 2 T yogurt and 1 T light mayo)
3. place 5 shrimp on each skewer
4. If shrimp are raw:
5. grill on each side for 2-3 minutes, until opaque and cooked through
6. If shrimp are pre-cooked:
7. Place shrimp skewers on a baking sheet and bake at 350 for 5-10 minutes
8. Brush each hot skewer liberally with the sauce, on both sides
9. serve immediately

Pumpkin Biscotti Recipe



Ingredients
• 2 1/4 cups all-purpose flour
• 1/2 teaspoon salt, kosher
• 1 1/2 teaspoons baking powder
• 2 teaspoons pumpkin pie spice
• 1/2 cup pumpkin puree
• 1 cup brown sugar
• 2 eggs
• 1 teaspoon pure vanilla extract
• 3/4 cups hazelnuts, chopped

Instructions

• Preheat your oven to 350 degrees and line a baking sheet with parchment paper. Set aside. In a large bowl, whisk together your flour, salt, baking powder, and pumpkin pie spice until completely combined. Set aside.
• In the bowl of your stand mixer (with paddle attachment fixed), cream together the pumpkin and sugar until smooth. Add the eggs one at at time, making sure the first one is completely incorporate before you add the second one. Add the vanilla extract and mix to combine. In 1/2 cup increments add the flour mixture to the wet mixture until all is incorporated, or until you have a very thick 'cookie-like' dough. Gently fold in with a heavy wooden spoon the chopped hazelnuts
• Flour your work surface and dump the dough onto it. Mold into a 12 inch by 4 inch log and transfer to your baking sheet. Bake at 350 degrees for 25-30 minutes or until just hard to the touch (be careful).
• Remove from the oven and let cool COMPLETELY for about 45 minutes to an hour. Transfer the parchment paper along with the biscotti to a cutting board and cut 1/2 inch slices out of the log. Line your baking sheet with another sheet of parchment paper. Lay out the biscotti slices, cut side down. Bake again for about 15 minutes or until crispy.
• Remove from the oven and let cool for 10 minutes on the baking sheet then transfer to a cooling rack to cool the rest of the way.
• Once the biscotti has cooled slightly, dip in vanilla glaze or white chocolate if you wish or serve plain with a cup of coffee! Enjoy!
• The biscotti can be stored at room temperature for 1-2 weeks.

Holiday Chewy Sugar Cookies


Ingredients
  • For the Cookies
  • 3 1/2 cups all-purpose flour, plus extra for dusting
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened to room temperature
  • 2 eggs
  • 1 teaspoon vanilla extract
  • seeds from 1/2 of a vanilla bean (optional)
  • 1/2 cup sour cream
  • 1/4 cup cream cheese, softened to room temperature
  • seasonal sprinkles (optional)
  • For the Buttercream Frosting
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups confectioner''s sugar
  • 4 tablespoons half and half (or something similar)
Instructions

  • In a large bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • In the bowl of your stand mixer, with paddle attachment fixed, cream together the sugar and butter. One at a time, crack each egg separately into the bowl. Mix to combine. Once incorporated, add the vanilla extract, seeds from vanilla bean, sour cream and cream cheese. Beat again to combine until all of the ingredients come together. In 1/2 cup increments add the dry ingredients into the wet until you have added it all. Mix until everything comes together and a soft dough forms. It should be sticky, but slightly firm. If it''s too "runny" add a tablespoon more of flour at a time until you get this consistency. Dump the dough onto a sheet of plastic wrap and cover. Refrigerate for at least 4 hours or overnight.
  • Once your dough has chilled, preheat your oven to 425 degrees F and line 2 large baking sheets with parchment. Set aside.
  • Generously flour a work surface, unwrap your dough and place onto the floured surface. Dust the top of the dough with more flour. Taking a rolling pin, roll the dough out to about 1/4 of an inch thick. Cut shapes out of your dough with a cookie cutter (I used a circular cookie and Halloween shaped cookie cutters). Once you have cut as many shapes as possible, place the shapes onto your prepared baking sheets (I had a dozen and a half total, but this will vary depending on the cookie cutter you decide to use). Bake at 425 degrees F for 6-7 minutes until they begin to brown slightly around the edges and feel slightly firm to the touch. Remove from oven and immediately transfer to a wire rack to cool COMPLETELY.
  • While your cookies are cooling, prepare you buttercream frosting. In the bowl of your stand mixer, with paddle attachment fixed, cream the butter until soft and fluffy, about 1 minute. Add the vanilla extract and mix again to combine. In 1/2 cup increments, while the mixer is on it''s lowest speed, add the confectioner''s sugar until it is all incorporated. Increase the speed to medium and beat for about 30 seconds until fluffy. Add in the half and half (or whatever you decided to use) and beat again for about 2 minute until light and fluffy once again.
  • Once cool, frost the cookies with the buttercream frosting. Sprinkle with sprinkles (if desired). Once the buttercream has set, transfer to an airtight container where the cookies will keep for about a week. Enjoy!

Healthy Oven Baked Zucchini Chips Reipe



Ingredients
  • 1 (large) zucchini, cut into 1/8" - 1/4" slices
  • 1/3 cup whole grain breadcrumbs, optional Panko 
  • 1/4 cup finely grated parmesan cheese, reduced fat
  • 1/4 teaspoon black pepper
  • Kosher or sea salt to taste
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 3 tablespoons low-fat milk
Directions

Preheat oven to 425 degrees.
Combine in a small mixing bowl, breadcrumbs, parmesan cheese, black pepper, salt, garlic powder, and cayenne pepper. Dip zucchini slices into milk and dredge into bread crumbs to coat both sides. Note: It may be necessary to press crumbs onto zucchini slices to ensure the crumbs stick.
Arrange zucchini on a non-stick cookie sheet and lightly mist with a non-stick cooking spray. We use Cassio Oil Spray Pump. Or, place zucchini on a wire rack sprayed with non-stick cooking spray.

If using a rack, place rack on a cookie sheet. Bake 15 minutes, turn over and continue baking until golden, approximately 10-15 minutes (being careful not to burn). Allow to cool to room temperature before storing in an airtight container.

Soft Pretzel Bites & Cheese Recipe


INGREDIENTS

For the pretzels:
1 1/2 cups warm (110 to 115 degrees F) water
1 tbsp sugar
2 tsp kosher salt
2 1/4 tsp instant yeast
22 ounces all-purpose flour, approximately 4 1/2 cups
2 ounces unsalted butter, melted
Vegetable oil
10 cups water
2/3 cup baking soda
2 tbsp butter, melted
Pretzel or Kosher salt
For the cheese sauce:
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 cup milk
8 oz extra sharp cheddar cheese, shredded (not package pre-shredded cheese - shred your own)
Kosher salt

INSTRUCTIONS

To make the pretzels: In the bowl of a stand mixer fitted with the paddle attachment, mix together the water, sugar, yeast, and salt on low speed for 10 seconds. Switch to the dough hook and add the flour and butter. Mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. Remove the dough from the bowl and transfer it to a well-oiled bowl. Cover the bowl tightly with plastic wrap and set it in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size.
Preheat the oven to 425 degrees F. Line 2 large baking sheets with parchment paper. Set aside.
Bring the 10 cups of water and the baking soda to a rolling boil in an wide 8-quart saucepan or roasting pan.
In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. Roll out each piece of dough into a 24-inch rope. Slice each rope into 1 1/2-inch pieces. Place a lightly damp towel over the pretzel pieces to prevent them from drying out while you roll and cut the other pieces.
Using a slotted spoon lower a handful of the pretzel pieces into the boiling water and boil them for 30 seconds, flipping them around in the water with the spoon a couple of times. Remove the pretzel pieces from the water using the spoon, drain as best you can, and place them on the baking sheets. Brush the top of each pretzel with the melted butter and sprinkle with the pretzel/Kosher salt. Bake until dark golden brown in color, approximately 10 - 12 minutes. Brush with remaining melted butter before serving. Serve warm.
To make the cheese sauce: In a small saucepan set over medium heat, melt the butter. Whisk in the flour and cook for 30 seconds, whisking constantly.
Slowly whisk in the milk until no lumps of flour remain. Stirring constantly, bring the milk to a simmer over medium-low heat until it thickens, about 3-5 minutes. Remove the pan from the stove and stir in the shredded cheese until all of the cheese has melted. Add a pinch of salt, if needed. Serve warm. Leftovers can be reheated in the microwave on medium power at 30 second intervals.

Ingredients

1/2 red onion, chopped
2 jalapeños, seeded and finely chopped
pinch of salt
juice of 1 lime
4 medium avocados
sprinkle of cilantro, chopped finely

Instructions

Mix the onion and jalapeño together with the salt and the juice of 1 lime. Let sit for a few minutes.
Meanwhile, roughly mash the avocados.
Mix the onion and jalapeño into the avocados and garnish with cilantro, to your taste.
